The Perfect Pork Chop

I guess I need to start off every blog entry by saying - STILL NO BABIES. That's a good thing though. The longer the babies stay in the womb, the more uncomfortable Brooks gets, but the less chance we have to worry about a stay in the NICU. Other than some swelling of the legs and a little cabin fever from having to spend a the 4th of July landlocked she is holding up well.

So the topic for this blog entry is the perfect pork chop, which I can honestly say I had tonight as we kicked off the holiday weekend. It started with two lean boneless pork chops from the Fresh Market. Next, the pork chops got the chance to meet Mr. Stubbs and his mouth watering Moppin' Sauce Bar-B-Que Baste (http://www.lonestarfoods.com). Place contents in a Zip-Lock bag and let sit in the refrigerator for at least two hours. Then grill for 15 - 20 minutes (these are thick cuts) at between 425 - 450 degrees for a juicy perfection. The entree was accompanied by lima beans and grilled corn on the cob. I'm still licking my lips...
